Beans and Peas - Borlotto Lingua di fuocco

A very popular Italian variety these 'Fire Tongue' pods contain 5-6 freckled beans. They can be picked as dwarf beans or left to mature and the beans shelled and dried.
Recipe Tip: Soak dry shell beans first, then cook over a slow heat with tomato and onions until soft and tender. Add a generous helping of fresh basil leaves and serve with fresh pasta such as penne or farfalle and top with shavings of parmesan cheese.
