A favourite vegetable throughout the Caribbean. The leaves can be cooked and used in the same way as spinach and the young leaves and stems can be harvested to use in salads.
Recipe Tip꞉ Cook chopped onion, garlic and a little nutmeg in a pan, add a diced small chilli, thyme and fresh tomatoes and warm through. Add fresh firm fish and crabmeat, simmer until cooked, drop in fresh calaloo leaves, and cook until wilted, serve.
