Radish - Hilds roter Neckarruhm

Easy to grow, tapering roots up to 30cm (12in) long have a lovely mild, spicy flavour and crunchy texture. Served as a snack with beer in Germany, they are simply sliced and rubbed with salt.

Recipe Tip: Grate equal quantities of celeriac, radish and carrot into a bowl, add plain flour and olive oil to bind ingredients together. Season with salt and pepper. Shape the rosti into small cakes and fry until browned. Serve with sour cream flavoured with mustard.
