Fresh mini-coriander is used in kitchens throughout the world. It features in numerous Oriental, South American, European and African dishes, amongst many others. The young leaves have a lemony, parsley-like taste. Coriander is used in salads, meat dishes and vegetarian dishes. You can eat the shoots after approximately ten days, at which point they will be 4-6 cm in height. If you leave them to grow for a further couple of days, the leaves will increase in size. To speed up the germination process, cover the dish with cling film after sowing the seeds and leave the dish covered for three days. Keep the dish out of direct sunlight, and keep the soil slightly damp.
