Fresh mustard sprouts have a spicy, mustardy taste and make a fantastic addition to salads, meat dishes, cheeses and potato dishes such as mashed potato. Mustard sprouts contain calcium, iron, and vitamin A, B1, B2 and C. You can eat the shoots after just seven days, at which point they will be 3-5cm in height. If you leave them to grow for a further couple of days, the leaves wilt increase in size. To speed up the germination process, cover the dish with cling film after sowing the seeds and leave the dish covered for three days. Keep the dish out of direct
sunlight, and keep the soil slightly damp.
